Combine all ingredients and firmly mix by hand for about a minute to combine.
It should be soft and easily managed with a wooden spoon. I like to use the one with a whole in the middle. Kind of makes it easier to go through the dough.
Cover and let it double up in size.
Shape
Do look at my video to see my simple way of shaping a ciabatta. I havent seen anyone use that kind of method
Bake for 35 - 40 minutes at 355°F or 185°C
Check by tapping the bottom of your bread. If it still feels soft, bake a little bit more
Leave covered with cloth to cool.

Tips and variations
I tried this method with all-purpose and whole-grain flour, and it works great with both.
Keep in mind that while adding the water, it should be manageable with a wooden spoon. If it feels too thick, add more water. If it feels too soft, add some flour. Check my video to see my consistency.
You can also make 2 small ciabatta breads with this method. Just adjust the baking time. They may be baked sooner
Yeast prep variation
Sometimes during the winter, the dough takes much more time to proof. That's why during the cold days, I often activate my yeast before making the dough. Here is how:
In a small cup, place half a cup of lukewarm water, yeast, one spoon of flour, and a tablespoon of sugar. Mix.
Leave covered in a cup for about 10-15 minutes.
Once you see the yeast is activated and creates bubbles, add it to your flour and proceed with the dough as the recipe says
Storage
Your bread will be good to eat for 4-5 days outside in a bag.As this bread cuts really nicely once cooled, you can cut nice slices and freeze for up to 3 months.
